Dubai Mums Say: Healthy Snacks from Earth Goods

In this post, we’re sharing some of the amazing recipes for healthy snacks received during our competition with Earth Goods. Earth Goods brings to UAE mindful products sourced from no less than 20 countries, supporting the local farmers and, of course, contributing to the expansion of the local organic market. They provide ingredients for healthy breakfast and snacks (like oats, granola, agave syrup, flax seeds etc.) but also pasta and cooking ingredients like oils. They also have a whole section of recipes and that’s where I looked first for inspiration.
We asked the mums to tell us some of their recipes so we all can get some inspiration for healthy cooking and baking.

Oat cookies
Here the ingredients :
1 1/4 cups quick oats
1 cup all-purpose flour
1 1/2 tsp baking powder
11/2 tsp Cinnamon powder
1/2 tsp salt
1/4 cup apple sauce
4 tbsp butter melted & cooled
1 large egg
1 tsp vanilla
1/2 cup honey
1/4 cup chocolate chips
1/2 cup chopped hazelnuts
How to
Whisk all the dry ingredients: oats, flour, baking powder, salt cinnamon and salt set aside. In a bowl, mix all the wet ingredients butter, honey, egg, and apple sauce, mix until combined. Fold in the dry mixture to wet mixture. Mix until combined. Add the hazelnuts and chocolate chips.
Scoop the dough and shape it into small balls. Bake for 15 at 180 C.

𝑯𝒐𝒏𝒆𝒚 𝒂𝒏𝒅 𝑵𝒖𝒕 𝑴𝒖𝒇𝒇𝒊𝒏𝒔
(using Earth Goods Oat Flakes)
Ingredients:
* 2 eggs
* 6 tablespoons of Earth Good Oat Flakes.
* 8 crushed walnuts
* 50 ml of skimmed milk
* 1 teaspoon of honey
* 1 coffee spoon of baking powder
Preparation:
Mix all ingredients. Divide the mixture into Silicon cups or paper forms and put the molds in the oven, preheated to 180° and wait until they are golden brown.
Tadaaaa!!!! It’s done!
Healthy and Delicious Honey and Nut Muffins are ready in no time. You can put these Muffins in your kids’ lunchbox and I’m sure they’ll love it.

OATS CHOCOLATE CHIP COOKIES 🍪
Ingredients:
Earth Goods

Oats – 1 1/2 cups

Baking soda – 1/2 tsp
Salt – 1/4 tsp
Sugar – 1/2 cup
Dark chocolate chips – 1/4 cup
Melted Butter – 2 tbsp
Milk – 3 tbsp
Preparation:
1. Preheat oven to 180c
2. In a food processor, blend Oats, baking soda and salt together until it looks like a flour.
3. Mix butter and milk with flour .
4. Add chocolate chips.
5. Using a cookie scoop, place the balls on a greased cookie sheet.
6. Bake for 15 mins.

Banana oat pancakes

Ingredients:
2 bananas

1 cup oats ( Earth Goods oats)
2 eggs
2 heaping spoons Greek yogurt
1 tsp baking powder
vanilla or cinnamon (optional)
1 tsp coconut oil
Use your food processor, blender or hand blender and a bowl to prepare the batter. Simply blend everything together until smooth.
Heat a large non-stick pan to medium, cover with butter/coconut oil and pour the batter forming small, palm-sized pancakes. Reduce the heat a bit (these burn fast if the temperature is too high!).
Once bubbles come up and the edges are done, flip using a large spatula. Cook until golden brown and then transfer to a plate.
Serve immediately like this or top with your favorite toppings – fresh fruit, Earth goods syrup, peanut butter or honey.

“Zaatar muffins”– A healthy savory snack or breakfast that fits in any citron compartment lunchboxes:
Recipe:
🧁Dry ingredients: In a bowl mix👇🏻
– 1 cup whole-wheat flour
– 1 cup milled earth goods oats.
– 1/2 tsp. Baking soda
– 1 tsp. Baking powder
– A pinch of salt
– 3 tablespoon milled flaxseeds
-3/4 cup dried zaatar mixed with sesame seeds.
🧁Wet ingredients: in a separate bowl mix👇🏻
– 2 whole eggs whisked with 1 tsp. Vanilla essence.
– 1 cup of low-fat yogurt or 1 cup of low-fat milk
– 1/3 cup olive oil

🧁Add the dry ingredients gradually into the wet ingredients. 🧁Don’t over mix.
🧁Grease a muffin tin with tahini paste. 🧁Pour in the muffin mixture
🧁Put the muffin tin in the middle shelf of a preheated oven and bake for 25-30 min on 180 degree celcius.
Tip: serve it with low fat minted labneh dip and vegetable cruditee’ ( carrots, cucumbers, colored capsicum and celery sticks)

My fave recipe using Earth Goods is a snack for my husband and my baby even for myself and it can even be packed in Citron Lunch Box too.
Vegan Peanut Butter and Banana Bars

3 ripe bananas
1 cup peanut butter
1/4 cup Earth Goods Organic Agave Syrup
2 cups Earth Goods Oat Flakes
1 cup Almond
1tsp cinnamon
1tsp vanilla extract
-Mix bananas, peanut butter, Earth Goods Agave Syrup, Cinnamon, Vanilla Extract until smooth
-Add Earth Goods Oats & almonds mix well
-In a baking dish, press and flatten distribute evenly
-Bake at 350 degrees for 30 minutes until golden brown
-Allow cooling then cut
-Store at room temperature or can be freeze for 6 mos in an airtight container.

BLUEBERRY BREAKFAST/SNACK healthy bars. 0 kCal plant based sugar. Great for kids and those who follow KETO diet.
PREP TIME: 10 min,
Cook Time: 50 min.
Makes 8 bars and great for lunchbox!
INGREDIENTS:
* 2tbs of chia seeds;
* 3 tbs of water;
* 1/2 cup almond flour ;
* 2 tbs of coconut flour,
* 3 tbs coconut oil,
* 1/4 cup coconut flakes,
* 1/4 almond flakes/slices,
* 1/4 cup of blueberries,
* 2 tbs of monk fruit sugar,
* 1 tsp lemon juice,
* 1 tsp vanilla extract.
INSTRUCTIONS:
1. Preheat the oven to 300 F (150 C) . Line a baking dish with parchment paper and set aside.
2. Add chia to the cold water and set aside,
3. Combine all the ingredients together in a bowl and stir in the chia mixture. Pour mixture into a baking dish and pack down.
4. Bake for approx 50 min. Let cool and cut into bars.
5. Store in an airtight container when cooled.
